Cruel summer: Searching for an escape from Japan’s extreme heat

Japanese summers are actually so sweltering that the Meteorological Company created a phrase to explain an entire new class of sizzling.

The time period “kokushobi” (actually, “merciless sizzling day”) was coined to explain the brutal warmth of temperatures 40 levels Celsius and above. In earlier years, mōshobi (“fiercely sizzling days”) of 35 C or larger had ranked as the most well liked, however by July, cities throughout Japan had already skilled a number of consecutive kokushobi days.

With dangerously sizzling summer season days now a truth of life, my kitchen repertoire throughout August focuses on sōmen — the chilled, thread-thin wheat noodles which have refreshed heat-weary Japanese since at the least the eighth century.
